Turkey breast wrapped in Parma ham with sauce

‘TIS the season for turkey and treats.

And, what better treat for the festive season than this yummy recipe from our healthy eating columnist, Sharron McCormick.

This week she brings readers her unique turkey breast wrapped in Parma ham recipe filled with garlic and herb cheese.

Also served with creamy mushroom and white wine sauce

Ingredients

l Four turkey steaks/breasts or chicken breast

l Two tablespoons of Quark

l One teaspoon of garlic salt

l Half teaspoon of mixed herbs

l Eight slices of Parma ham (fat removed)

l One tablespoon fresh grated Parmesan cheese

For the sauce:

l 150g of sliced mushrooms

l Quarter teaspoon mustard

l Quarter teaspoon garlic salt

l One white wine stockpot or 25ml white wine

l One chicken stockpot

l 100ml unsweetened almond milk

l Black pepper

l Two tablespoons of fat free Fromage Frais

l Quarter teaspoon of Xanthan Gum powder (optional)

Method

1: Put the turkey between two sheets of cling film and using a rolling pin or meat hammer gently batter to approximately 2 cm in thickness. Thinly sliced cooked turkey can also be used.

2: Mix the Quark, garlic, herbs and Parmesan cheese together and spread in each fillet, gently roll together and wrap in Parma ham.

3: Cook by frying in a non-stick pan, turning occasionally for 20-30 minutes or until completely cooked through or in the oven at 190 for 25-35 minutes. If using cooked turkey slices reduce cooking to 10-15 minutes.

4: For the sauce; in a large pan add the milk and stockpots, along with the mushrooms, mustard powder and garlic salt.

5: Bring to the boil and reduce the heat, using the optional Xanthan powder at this point will help to give a thick and glossy sauce.

6: Remove pan from the heat and add the Fromage Frais. Gently simmer for three to five minutes then remove from heat two minutes before serving to allow the sauce to thicken.

Tip: For a thinner sauce add a little water.
