Spiced carrot and lentil soup

IN this week’s healthy eating corner, Sharron McCormick brings readers a perfect recipe to help beat away the winter chills – spiced carrot and lentil soup.

By following her quick, simple and healthy recipe, you’ll be able to whizz this soup up in three minutes.

Sharron explained: “This warming soup is so tasty, nutritious and easy to make.

“It’s full of protein and the chilli spice adds a lovely warming kick.”

The recipe is perfect for lunch and it’s ready in minutes.

Ingredients

l One tin of lentils

l One vegetable stock pot

l 100mls water

l Two teaspoons of dried coriander leaf

l Two small tins or one large tin of carrots

l One teaspoon of garlic granules

l One teaspoon of chilli powder

Method

1: Pour the carrots (including juice from the tin) and lentils (including juice from the tin) in to a food blender.

2: Add the stock stockpot, water, coriander, garlic granules and chilli powder and blend until smooth.

3: Simply heat in the microwave or in a pan for a few minutes until heated through. Enjoy with porridge bread.
